Szechuan Pizza



Crust: – 4 cups Italian Tipo “00” flour – 2 teaspoons kosher salt – 1 teaspoon active dry yeast – 1 ½ cups water Szechuan Tomato Sauce: – 1 14-ounce can whole peeled San Marzano Italian tomatoes – ¼ cup Szechuan dried chilies Garnish: – 12 ounces grated Real California Mozzarella cheese – Italian sausage – Sliced mushrooms – Cilantro leaves

To prepare crust, combine dry ingredients in a bowl. Mix in water until almost all moisture has been absorbed. Proof in refrigerator until ready to use.

To prepare Szechuan tomato sauce, combine chilies and tomatoes in saucepan over medium heat. Simmer, breaking up tomatoes until reduced to desired thickness. Remove from heat and remove chili pods.

To prepare pizza, preheat pizza oven. Stretch dough to desired thickness. Spread with tomato sauce. Sprinkle Mozzarella cheese evenly over sauce. Dot top with pieces of Italian sausage. Scatter evenly with sliced mushrooms. Bake until crisp and bubbling. Remove from oven and scatter cilantro leaves over top before serving.
