Carne Asada Vampiro Tacos

Ingredients:

– 2 lbs. flank steak – 1/2 cup Mexican beer – 1 teaspoon salt – 1 teaspoon garlic powder – 1 teaspoon ground chile powder – 1 teaspoon ground black pepper – Non-stick cooking spray – 8 corn tortillas – 2 cups melting Real California cheese (Queso Quesadilla or Monterey Jack), grated – 1/2 white onion, diced – 1/2 cup cilantro, chopped – 1 cup guacamole – 1/2 cup salsa :Tacos, Queso Quesadilla, Monterey Jack, Beef, Carne Asada, Flank Steak, Hispanic Dairy

Directions:

Prep: 20 minutes

Cook: 20 minutes

Marinate flank steak in beer, salt, garlic powder, chile powder, and pepper for 1 hour prior to cooking.

Heat grill to 450 degrees. Spray grill with non-stick oil/spray. Place flank steak on grill and cook 4 minutes on each side. Remove from grill and allow to rest for 5 minutes before cutting into 1 inch width strips. Set to the side.

Place a corn tortilla on a comal or griddle over a high heat. Then sprinkle 1/4 cup on top of the tortilla, allow it to melt a little then flip over using tongs so the cheese side is now face-down on the comal/griddle. Let the cheese cook on the comal/griddle until it is crisp.

Remove tortilla from comal/griddle and fill the crispy cheesy center with a few strips of carne asada, a sprinkle of diced onion and cilantro, a heaping tablespoon of guacamole, and 1 tablespoon salsa.

Repeat until all tacos are made and serve immediately.
