Blend together 1 cup vanilla yogurt, 1/4 cup Limoncello (lemon liqueur) and 2 tablespoons diced, cooked beets until smooth.
Tear 1 large basil leaf into pieces and blend again until finely chopped.
Pour into a glass and garnish with lemon zest and a basil leaf.
